
When a recipe is this simple, the quality of the ingredients really matters. Summer heirloom tomatoes are so flavorful on their own, and a really good olive oil and vinegar only make them better. I used Brightland Olive Oil and Champagne Vinegar for the basil vinaigrette—the olive oil is rich and smooth, while the vinegar adds just the right amount of brightness.
