Summer Heirloom Tomato Salad with Basil Vinaigrette

When a recipe is this simple, the quality of the ingredients really matters. Summer heirloom tomatoes are so flavorful on their own, and a really good olive oil and vinegar only make them better. I used Brightland Olive Oil and Champagne Vinegar for the basil vinaigrette—the olive oil is rich and smooth, while the vinegar adds just the right amount of brightness. Along with creamy burrata, it’s a simple summer salad that lets those beautiful seasonal tomatoes shine.
