Last night I finally made a dinner I’ve been dreaming about. Pinterest is absolutely bursting with peach, burrata, and prosciutto platters and I couldn’t wait another minute. Admittedly it’s not quite nectarine or peach season… so I solved that by sautéing my nectarines in a little butter until they turned soft. The heat and butter made them much sweeter.
I had baby lettuce from the farmer’s market, speck and burrata in the refrigerator calling my name, fresh basil and lemon thyme from my garden, and the most delicious balsamic vinegar from Flamingo Estate to drizzle over the whole thing with a little flaky sea salt. I’d also picked up a fresh loaf of cheddar sourdough that I toasted with loads of salted butter… the perfect accompaniment to this salad.



I paired this with a Bordeaux rosé…the Grand Launey from Dry Farm Wines. Dry, crisp, and absolutely heaven in a glass… one of my favorites yet.


The balsamic is worth a mention…I used the Old World Lambrusco Trebbiano from Flamingo Estate. It’s thick, almost syrupy, with a flavor so intense a small drizzle is all you need. Also, don’t skip the buttery nectarines… they’re the best part. A few minutes in the pan turns them soft and jammy and they melt right into the creamy burrata.
A quick note on the speck… it’s similar to prosciutto but comes from northern Italy near the Austrian border, so it’s lightly smoked and seasoned with juniper and pepper before it’s aged. That gentle smokiness is what makes it so good here… it plays against the sweet buttery nectarines and creamy burrata instead of doubling down on the richness. Prosciutto would be lovely too, but the speck adds a little contrast that pulls the whole plate together.


Make this salad with fresh peaches and add garden-ripened tomatoes as soon as you can get them at the farmer’s market. I can’t even tell you how much we enjoyed this meal… and the Bordeaux Rosé made a perfect pairing! Summer cooking is so easy when everything is fresh and flavorful.
