Grilled Corn Salad – The Best Summer Side

Every year, I look forward to summer for many reasons, and one of them is summer vegetables! I love fresh corn, okra (I’m Southern so I love it fried), fresh tomatoes and so much more! This corn salad is one of my favorite ways to eat corn. It’s easy and so delicious.

Even though it’s not quite corn season (at least here), I’m still seeing fresh corn in the grocery store and I just couldn’t resist making this salad for our Memorial Day celebration! One of the best things about it is that you can make it early in the day and serve at room temperature and it’s also fabulous the next day…lunch anyone?

Recipe

To turn this salad into an easy and complete meal, grill some salmon along side or for a vegetarian option serve the salad on top of a black bean burger! We actually ate it as a side for hamburgers along with roasted okra, squash, cantaloupe and sliced tomatoes. We will definitely have leftovers tonight!
