Slow Cooker Tuscan Chicken

I first made this Slow Cooker Tuscan Chicken to take to Columbia South Carolina when I went to visit my brand new granddaughter Lawson, for the first time. I assembled everything in the slow cooker the night before and put it in the refrigerator. I got up early the next morning…around 5 am, and plugged in the slow cooker. By the time I was ready to hit the road, the chicken was ready. I packed the chicken, slow cooker and all in a cooler and drove the 3 hours to Columbia. When I arrived, I plugged it back in, set it to warm and we had a delicious dinner that evening.

This chicken is comfort food…healthy, warming and delicious and, it fills the whole house with the most amazing aroma. I love to make recipes like this in the colder months because they are not only tasty, they are welcoming. It’s so nice to walk in the door and know the most delicious dinner is waiting and all you have to do is sit down and eat!

If you take just a few minutes to put something in the slow cooker in the morning (or the night before), the reward is exponential and, oh so much better and healthier than takeout!

I do have a confession to make…I totally forgot to add the spinach in this recipe! When I was putting the chicken in the bowls, I thought something was missing but it didn’t dawn on me what it was until I sat down to actually eat some for dinner last night! It was really really delicious without the spinach but spinach does add color and flavor and definitely nutrition…so, when you make this recipe, don’t forget the spinach!

And about the boards…I’m not sure if I’ve ever mentioned the board that the soup bowls are on but it is an antique pizza board from France that I found at one of my very favorite shops in Greensboro NC called Lisa Johnson Co. I use this board often…it’s perfect for displaying food and is a beautiful board for charcuterie. Lisa Johnson is on Instagram so be sure to follow her for some fabulous eye candy and if you’re ever close by, pop into the shop and say hello…you’ll be glad you did!

The other board is from a company that I love called Provence Platters and first found at Cremé de la Creme in Richmond, Virginia (another favorite shop). It’s made from an old wine barrel and so beautiful for bread, cheese, candles, flowers, etc. I’m starting to have quite a large collection of boards and keep adding dishes as well…I’m running out of storage for it all!

Use any kind of bread you like for this recipe…I had a loaf of brioche from Trader Joe’s and toasted it with a little olive oil, salt and Pecorino. It was delicious, but you can’t go wrong so use what you have!
