Burrata with Heirloom Cherry Tomatoes & Pesto

I saw a picture recently (although I'm not sure where) of a beautiful platter of burrata cheese with colorful cherry tomatoes and I haven't been able to forget it!  Yesterday, when we were at Whole Foods getting groceries for Hudson's birthday dinner, I decided to buy the ingredients to make my version of the salad.  Fresh, creamy burrata is one of life's simple pleasures...add perfectly ripe cherry tomatoes, basil pesto, a drizzle of olive oil and salt and pepper and you have an appetizer or side dish that everyone will love!  I topped it with some roughly chopped fresh basil and it was sooo delicious!  You can use my recipe for basil pesto, or in a pinch, use store bought.

The only thing I might add to this salad would be a loaf of crusty homemade bread!  I included a recipe, but you really don't need one.  I hope you'll make this before tomatoes go out of season; I promise you won't be disappointed!
