Originally, I had planned to do Moscow Mules on the porch for my post this morning, but as you can see it changed a little.  It all started when Rebecca and I popped into Mary Katherine’s Gifts to buy my favorite Rewind candle.  We were looking around and she found this great dress!  When she tried it on, it was so adorable that we had to get it.  I knew it would be beautiful photographed under these pretty pink crepe myrtle trees so…!   After, we went home and made the Moscow Mules and had some delicious cheese and crackers on the porch.  It had cooled off some and was so pleasant that we decided to eat dinner there also.  Dinner was a Creamy Tomato, Burrata and Eggplant Pasta and it was so easy and fabulous that I decided to photograph it and share today also!  This post is a little long, but I hope you enjoy it!  The recipe for the pasta is below.

This is such a great dress to wear now and will also be great going into Fall!

Moscow Mules on the porch!

The Creamy Tomato, Burrata and Eggplant Pasta was very quick and easy to make!  It would be ideal for a busy weeknight dinner.

My Caladiums are so beautiful this year, probably because of all the rain.  They made a quick centerpiece for our dinner.

The recipe called for buratta cheese which is a fresh and really soft mozzarella cheese.  The grocery store was out of buratta so we substituted mozzarella and it didn’t melt as well but was still very tasty.

I also served the pasta with grated Parmesan even though the recipe didn’t call for it.
