I noticed the other day that I had a pound of Chorizo sausage in the freezer from a local butcher and decided to make something with it. I searched the internet until I found an easy recipe that I thought would be a hit with my family! I definitely found a great recipe…this Mexican Chorizo and Potato Casserole is easy, delicious and we all loved it. It makes quite a bit, but leftovers are delicious…just make sure to save some guacamole!
On another note…I’ve begun to update my Amazon Shop and there are so many great things (most of them I’ve purchased)! Be sure to check it out – here!
I hope you’ll try this recipe! I think it would be amazing for summer with homemade guacamole and garden fresh tomatoes!
Hi Suzanne! This looks super yummy! Where do you get the chorizo? I think I will be making this. Hubby is super sensitive to preservatives in sausage so I have to be careful there. Any suggestions for the chorizo will be greatly appreciated!
Hi Myrna
OMG I love seeing your name on a comment! I got the sausage at Left Bank in Saxapahaw so it should be completely preservative free and it’s so delicious! I love buying meat there because it’s all local! Let me know if you make it! Thank you for reading!
