Mongolian Beef & Noodles – Your New Favorite Weeknight Meal

Rich, savory, and on the table in under 30 minutes…

Last night I went live on Instagram and decided to do something a little risky…I made a recipe I had never tried before. Live with no test run, no do-overs. Just winging it in real time…and thankfully it was incredible! This is the second Sunday in a row that I’ve gone live and I plan to make it a Sunday Supper Series so I hope you’ll join me. I’ll plan to be live unless I’m out of town! I really hadn’t planned to post the recipe until Wednesday because I had something else planned, but so many people left comments on Instagram that I decided to go ahead and post! I hope you enjoy!


This recipe for Mongolian Beef & Noodles is Asian-inspired comfort food that comes together quickly and easily, making it the perfect weeknight (or any night) dinner. The flavors are rich and savory, the noodles are hearty, and the whole dish feels indulgent without actually being too heavy. Fresh ginger and garlic are both incredibly good for you and give it that deep, authentic flavor and the green onions on top add just the right amount of freshness. Pair this with a dry rosé, a crisp Pinot Grigio, or a dry Riesling…all three hold up beautifully against the savory, slightly sweet sauce without overpowering it. If you prefer red, a light Pinot Noir works surprisingly well. And if you’re feeling festive…a dry sparkling wine is never a bad idea. Whatever you pour, this is the kind of meal that’s just as good for a casual Tuesday night as it is for having people over. Easy enough for a weeknight, impressive enough for company!
