The Dinner You’ll Make on Repeat – Teriyaki Salmon with Coconut Rice

Last night for dinner, I made this delicious Teriyaki Salmon with Coconut Rice and served broccoli along side! The sauce for the salmon comes together in minutes and is simmered in a saucepan. It has tons of fresh ginger and just enough garlic to make it really flavorful. It was really easy, quick and the cleanup was minimal. We all devoured it and Baldy ate 2 servings! I drizzled the broccoli with olive oil, 3 or 4 cloves of fresh garlic, kosher salt and freshly ground pepper and then nestled a few lemon slices in to roast with the broccoli. It roasted at 400 degrees for around 12 – 15 minutes. Squeeze warm lemon slices over the broccoli when it comes out of the oven for even more flavor.

    I made this dish for dinner tonight and it was so delicious! Michael loved it too! I will definitely make it again. One of the best salmon dishes I have ever tasted. Instead of broccoli, I made Asian slaw as a side and it was great with it. Thank you for sharing !
