Spring Stuffed Chicken Breasts with Broccoli and Goat Cheese

Happy Saturday from Germany! I just arrived in Germany to visit my daughter, son-in-law and new grandson last night! It was a long day of travel! I realized when I was looking over my blog posts that I failed to write anything about this delicious chicken recipe!

It was an event to get here and looking back I realized how rushed I was to try and get prepared for my trip and keep up with this blog and Instagram so I totally apologize for the slack post! However, let me tell you…this chicken is so delicious! The filling is really easy to put together and can be done in advance. Just pull it out of the refrigerator and stuff the chicken right before cooking. The recipe calls for cooking in a cast iron skillet, but I’ve done it on the grill and it’s just as tasty with less mess. If you’re serving a crowd, cook in advance, slice and serve on a large platter…it makes such a pretty presentation! This is one of my favorite ways to make chicken! I know you’ll love it!

Easy and delicious…these tender chicken breasts are stuffed with broccoli, goat cheese and red pepper. This quick flavor packed meal is bursting with so much flavor and makes a great low-carb dinner. It’s wonderful served with my Fresh Pea Salad!
