Sausage & White Bean Soup ~ It’s Soup Season!

As the crisp air of autumn settles in and the leaves begin to turn… soup season arrives and it’s time to build a fire and sit under the stars. This time of year is so cozy and inviting and I love nothing more than having a big pot of soup simmering on the stove. Soup nourishes body and soul, especially when it’s cold outside…there is just something about eating a warm bowl of soup. It seems like a celebration of the fall season and making soup is a ritual that I love. The aroma fills the house and reminds me of the simple joys of being home and cooking. It’s comfort food that creates a sense of togetherness as we enjoy eating and talking by the fire.

Sausage and white bean soup is a hearty soup that combines the flavors of sausage with creamy white beans. This flavorful and healthy soup starts by sautéing onions, garlic, and carrots, along with thyme, Italian seasoning and red pepper flakes. As the soup simmers, the beans absorb the delicious flavors of the sausage and the addition of spinach and a little cream give it an unbelievable richness. Using fresh garlic enhances the flavor of this soup and it’s so much healthier than the processed kind that comes in a jar. I also recommend buying a whole head of garlic instead of the pre-peeled cloves.

If you don’t have a good soup pot, I highly recommend this one from Le Creuset. It’s so pretty and sturdy…it’s one that will last a lifetime!

I use my immersion blender often with soups. It’s so much easier than pulling out the blender and it leaves more texture in the soup. Unless you want a really smooth soup, an immersion blender is the way to go!
