Since I’ve been on a quest for a healthier lifestyle, I’ve cut meat completely from my diet. While I do eat some fish, it’s been mostly vegetarian for me over the past several weeks. Sometimes, coming up with a delicious vegetarian dinner can be challenging, so I’ve found 15 delicious dinner recipes that are easy and healthy. If you’re worried about getting enough protein with these recipes, rest assured that a diet rich in vegetables, legumes, good grains, seeds and nuts, will give you all of the protein you need. There are major benefits from eating a plant based diet both for our bodies and for the planet!     These look good and I will try some of them. My husband and I, influenced by the film “ Forks Over Knives”, have been eating WFPBNO ( Whole food, plant based, No oil) for a few years now and greatly improved our health and lost weight in the process. When we travel or eat out, we relax a bit as no oil is pretty much impossible outside our kitchen. I will adapt the above recipes to fit our guidelines.

      Hi Penelope! I’m very interested in the film and will definitely watch it. I’m very curious about the no oil. Everything I’ve read says to eat olive oil, coconut oil, macadamia nut oil…ghee. Thanks so much for reading today and I always appreciate comments!

    I am also on the Vegetarian- Pescatarian Journey. I have done it before and enjoyed it. I really appreciate all these wonderful recipes. The main reason that I am doing it is that I cannot get my cholesterol down. I have been on Statins for years and do HIIT workouts 4 times a week. I eat a very healthy. My husband loves to go out to eat on the weekends and we have a great social life with usually revolves around food and alcohol. I have just like you cut my wine consumption to 1-2 glasses per day (only on weekends). I told my husband I am not telling my friends about my change in my diet because so many people get so worked up about being a vegetarian. Have you experienced that?

      Hi Bonnie! I was a vegetarian before as well…for 18 years and yes I did find that people just didn’t get it. I think it’s a little more prevalent now with people trying to be healthier and also more environmentally responsible. People are just confused about what to eat and even some vegetarians end up eating way too much cheese and pasta and not enough veggies. I’m trying a carrot dish tonight that sounds amazing and will put it on the blog if we love it! Good luck with your journey…you’re doing better with the wine than I am. Thanks for reading today!
