Creamy & Refreshing Lemon Icebox Pie

01

If lemon is your thing, you’re going to love my Lemon Icebox Pie! My mother made a version of it when I was growing up and it was my favorite! It’s a little tart, very creamy and a refreshing ending to a meal! Make it the day before you want to serve it because it needs to be in the freezer for at least 8 hours.

I doubled this recipe so I would have an extra pie in the freezer because they’re so delicious but for some reason I had a hard time finding 9 inch pie crusts so I bought a 10 inch and an 8 inch which worked perfectly.

The pie is pictured in a shallow bowl from Haand Ceramics and the pink plate is also from Haand! Haand is a local pottery studio that makes dishes for hotels and restaurants all over the world! They also have a retail store here in Burlington and you can order from the website!

I love to eat from handmade plates and especially locally made ones! The pink dishes were designed for Vivian Howard for her restaurant in Charleston and they’re my favorites! If you’re interested in shopping, I have a 15% discount code and you can use CRAZYBLONDELIFE at checkout! They have fabulous serving dishes that would make amazing holiday gifts. I recently special ordered a set of espresso cups to give to my son-in-law for his birthday and they were a hit! I think something handmade always makes a better gift!

I don’t usually make desserts, but this one was calling my name! I hope you enjoy!
