Creamy Tomato & Chicken Soup with Coconut Rice
My daughter Lauren shared this recipe for Creamy Tomato & Chicken Soup with me years ago and itβs one of my favoritesβ¦!
Indulge in a bowl of creamy tomato and chicken soup, where rich coconut milk infuses with tender pieces of chicken and tomatoes. I serve this soup over a fluffy bed of rice that soaks up the flavorful aromatic broth. The finishing touch is a generous handful of fresh spinach, added just before serving. As it wilts gently into the warm soup, it not only enhances the visual appeal but also boosts its nutritional profile, making for a delicious and healthy meal that warms both the body and soulβ¦perfect for a cold winter night. Creamy Tomato & Chicken Soup with Coconut Milk & Rice
Ingredients
- 6 large frozen skinless boneless chicken breasts
- 2 tablespoons Italian seasoning
- 1 tablespoon dried basil
- 2 cloves garlic, minced
- 1 large onion, chopped
- 2 14 oz. can of coconut milk (full fat), shake before opening can to avoid separation
- 2 14 oz. can diced tomatoes and juice
- 2 cups of chicken broth
- 1 small can of tomato paste
- 1/2 jar of your favorite tomato sauce
- sea salt and pepper to taste
- 1/2 bag baby spinach

Instructions
- Put all the above ingredients into a slow cooker and cook on low for 8 hours. After 8 hours shred the chicken with two forks. Taste, adjust seasonings and add spinach to hot chicken.
- For the rice:
- In a rice cooker or on the stovetop combine:
- 1 - 15 ounce can coconut milk (full fat)
- Fill coconut milk can with Jasmine rice and add to cooker.
- Fill coconut milk can again with water and add to cooker.
- Cook according to package directions or use a rice cooker.
- Serve soup over rice
Youβll want to make this all winter long and itβs great for guestsβ¦serve it right out of the slow cooker!

If you feel that the coconut milk in the soup AND in the rice is too much, just make regular rice, or serve it withoutβ¦either way, itβs really a warming, fabulous dinner!
