Potato Salad with Warm Mustard Vinaigrette
We had a Southern fried chicken dinner on Sunday evening and I made this potato salad to go with it! My daughter asked for it, but we couldn’t find the recipe so we recreated it from our memories. I added the sweet pickle because I had just bought a jar of Wickles Pickles Sweet Pickles and it sounded good…it was!
I love the crunch of the celery and carrots combined with the soft potatoes and warm vinaigrette. A few slices of crumbled bacon added at the end would be yummy, but aren’t included in the recipe. A friend suggested that it would be delicious with canned tuna which would make an amazing and easy lunch.
Don’t lose the recipe like I did…it’s a keeper and one you’ll make over and over again!
