Macadamia Crusted Salmon with Mauna Loa Macadamia Nuts

I could honestly eat salmon every day of my life and never get tired of it and I’m always looking for new ways to cook it! When Mauna Loa Macadamia Nuts reached out to me, I jumped at the chance to come up with a recipe using these delicious macadamia nuts! I make a similar recipe to this Macadamia Crusted Salmon using panko breadcrumbs, and I decided that adding macadamia nuts and basil to the panko would be an amazing flavor combination and I also added a little coconut oil for to give the salmon a more “tropical” flavor! This healthy and delicious recipe is so easy to make and you’ll love it! You could substitute thyme and or oregano for the basil and use olive oil instead of coconut oil. Serve with my world famous coconut rice (find the recipe in this post), lemon slices and extra basil if you like!

Mauna Loa macadamia nuts are gluten free and made with non-GMO ingredients them healthy for everyone! I used the Hawaiian Sea Salt flavor in my salmon topping and not only is the flavor is amazing, the nuts boost the nutrients in the recipe!

The panko/madacamia nut mixture gets very crunch as the salmon bakes…if it starts to get too brown, place the salmon on a lower rack in your oven. This recipe is fancy enough for company and easy enough for a busy weeknight!

Macadamia & Parmesan Crusted Salmon

This recipe is healthy, easy to prepare and very delicious!

Ingredients

  • 4 salmon filets - about 6 ounces each
  • 1 cup macadamia nuts - roughly ground in a food processor
  • 1 cup panko breadcrumbs
  • 3/4 cup finely grated Parmesan cheese
  • Melted coconut oil to brush salmon filets and moisten nut mixture
  • 2 tablespoons chopped fresh basil
  • Salt and freshly ground black pepper
  • Juice of a lemon

Instructions

  1. Preheat your oven to 425°F
  2. Brush salmon with coconut oil, season it with salt and pepper and squeeze a lemon juice over filets
  3. Combine macadamia nuts, panko and Parmesan and basil and season the mixture with salt and freshly ground black pepper. Add 2 - 3 tablespoons of coconut oil to the mixture and spoon over salmon.
  4. Bake for around 15 minutes and enjoy!
