A Brunch Board to Celebrate Spring

Last week, I decided to serve brunch and invite my daughter and her family. I had a vision for a brunch board that I had been wanting to put together for some time, so I did the grocery shopping and in my mind planned how it would look. After doing a little prep work the night before, on Sunday morning, it came together pretty easily! Keep scrolling for the details.

Here’s how the Brunch Board came together:

Cheesy Egg Cups (recipe below)

Smoked Salmon with classic condiments - capers, sliced red onions, Boursin cheese and mustard

Halved cherry tomatoes, cucumbers and sliced avocados

Piquillo peppers, stuffed peppers, cornichons and pickled asparagus

Crispy roasted potatoes with onions

Bagels, crackers and English muffins

Honey and jalapeno jelly

Local goat cheese

Fresh herbs from my neighbors yard for garnish and eating

The bottom of the basket was covered in parchment paper and the I placed a round cutting board for the egg cups and a small rectangular cutting board for the smoked salmon. The bowls were then arranged to hold condiments, potatoes and pickled items. After, I added cherry tomatoes, cucumbers, avocados, cheeses, and crackers and then filled in any spaces where the parchment was showing with fresh herbs. The bagels and English muffins were served separately because my daughter has Celiac Disease.

A note about my basket - I found it many years ago at TJ Maxx and I can’t remember ever using it, but I’ve been holding on to it for just the right occasion and this was it. I scoured the internet and found this similar one, but any large flat basket would do!

I wish I had added fresh local strawberries and some homemade mini muffins to complete the board, AND I totally forgot to add the Burrata Cheese that I bought, but there is always next time. The beauty of this brunch board is that you can put anything you enjoy eating for brunch on it…imagine a waffle brunch board, or mini quiches in place of the egg cups…the sky really is the limit and it should be fun! The most important part…don’t forget the mimosas!

The day was beautiful with sunshine and a blue sky, so we ate outside, had great conversation, and at the end of the afternoon, decided to plant some flowers! I had a little help from Graham and Hudson who left covered with dirt and jelly…tired and happy!
