Crunchy Broccoli Salad with Tahini Dressing

I love to eat broccoli, but I don’t love to eat it raw and most broccoli salads use raw broccoli. That’s the very reason I was attracted to this Crunchy Broccoli Salad with Tahini Dressing! The broccoli is blanched just long enough to make it tender, bright green and really tasty. Combined with chopped red cabbage, sweet dates, spicy chili cashews and a creamy tahini dressing…this is a beautiful, delicious and healthy salad.

Delicious, crunchy, satisfying and slightly addictive!

Ingredients

  • 2 large heads broccoli cut into small florets
  • 2 cups shredded purple cabbage
  • 1 cup chopped Medjool dates (I used a little more)
  • 1-1/2 cups cashews
  • 1 teaspoon chili powder
  • Avocado oil
  • Dressing - I doubled the recipe!
  • Generous 1/2 cup tahini
  • 1/4 cup warm water to thin dressing
  • 2 heaping tablespoons honey
  • 2 tablespoons apple cider vinegar
  • Flakey sea salt to taste

Instructions

  1. Preheat the oven to 350 degrees.
  2. Toss the cashews with avocado oil and chili powder and season with salt. Roast in the oven for about 10 minutes, watching to make sure they don't burn.
  3. Bring a large pot of water to a boil and prepare a large bowl with ice water. Blanch broccoli florets by adding them to the boiling water for about two minutes and then quickly place them in the ice bath for one minute. Remove from the ice and pat dry with paper towels.
  4. Add broccoli to a large mixing bowl, along with the chopped cabbage, cashews, and dates. Whisk together the dressing ingredients and pour over, tossing to ensure the ingredients are evenly coated. Serve and Enjoy!
