5 Ingredient Dinner - Salmon with Pesto and Roasted Cherry Tomatoes

Today, I’m bringing you an easy recipe that you’ll want to make all summer long! It’s so nice to have a go-to recipe that you can throw together at a moments notice! This Pesto Salmon with Roasted Cherry Tomatoes is so flavorful and has only five ingredients, making it ideal for a busy evening and also great for summer entertaining!

The flavors in this dish work so well together and I think it’s a great meal just as it is, but if you need a more substantial meal, serve some grilled veggies alongside or even serve it all over pasta! The pasta will absorb the amazing flavors of the salmon and pesto and definitely be heartier and very delicious. During the summer, I’m always looking for an easy and tasty meal that’s also not too filling!

You may be wondering why I use rotisserie chicken seasoning on salmon? One day, I was making salmon and looking for something to season it with other than salt and pepper and decided to try a little of the rotisserie chicken seasoning…it was delicious and I’ve been using it ever since. You could season the salmon however you like, but this way is worth a try!

I purchased this Lodge Blacklock Triple Seasoned Grill Pan from Williams Sonoma while I was in Lexington, Kentucky and I absolutely love it! It’s great for everything from grilling veggies to salmon to shrimp and more!

I really do not like to be served salmon with the skin on, so I always sear it in a hot pan and lift the piece of salmon right off of the skin. That way, I can remove the skin from the pan, flip the salmon over…sear it on the other side and flip it one more time just to brown the skin side. This method works perfectly every time and you don’t have to deal with a piece of skin on your plate. You can also do this on the grill.
