Air Fryer Salmon with Coconut Rice and Sizzled Green Onions

Normally, on the days that I cook for Crazy Blonde Life, I make the recipe and do a video as I’m cooking. I then plate the food and make it look pretty, take it outside to my front porch table to photograph, come back in and finish the video…you can’t taste before you photograph, and then I’m finished. It has been so dang cold here for the past week that I haven’t gone outside to take any pictures and the light in my kitchen is not the best, so I apologize for the less than stellar photographs of the food.

In spite of the pictures, this salmon is melt-in-your-mouth delicious and so very simple to make. An air fryer (and a rice cooker) just make life easier and if you use an air-fryer liner or a piece of parchment for the air fryer, the clean-up is very minimal. There really is no excuse not to eat healthy food these days!

And…a word about the mayonnaise…

I have always been a Duke’s mayonnaise fan but my children introduced me to Kewpie mayonnaise at the beach this summer and OMG it is so delicious! I use it in pretty much everything these days, so if you haven’t tried it, I highly recommend!

Air Fryer Salmon with Coconut Rice and Sizzled Green Onions

It doesn't get any easier than this delicious salmon and the flavor is divine!

Ingredients

  • 1 - 12 ounce piece of salmon (you could use 2 - 6 ounce pieces)
  • Olive Oil
  • 1 Tablespoon salmon seasoning
  • Kosher salt & freshly ground pepper to taste
  • 1 bunch scallions, sliced
  • 1/2 teaspoon red pepper flakes
  • For the sauce:
  • 1/3 cup Kewpie Mayonnaise
  • 1 Tablespoon Siracha
  • Dash of Maple Syrup
  • Dash of Soy Sauce or Tamari
  • Coconut Rice - 1 can coconut milk, 1 can (same can as the coconut milk came in) Jasmine rice, 1 can water (also same can as coconut milk), salt to taste

Instructions

  1. Prepare Coconut Rice
  2. Drizzle Salmon with olive oil and sprinkle on salmon seasoning, salt and pepper. Rub the spices into the salmon and place in an air fryer for 9 minutes at 390 degrees.
  3. While the salmon is cooking, saute the scallions - add olive oil to a small, hot skillet. Add scallions and red pepper flakes and saute for about 2 - 3 minutes over medium heat. Remove from the heat and set aside.
  4. Make the sauce. In a small bowl, combine mayonnaise, siracha, maple syrup and tamari. Blend until combined.
  5. To serve. Place a spoonful of warm rice into the bowl, place salmon on top of the rice, drizzle with sauce and sprinkle the hot scallions over the top! Eat and Enjoy!

As I said above, the weather here is so cold and I don’t like it at all! I have to go outside later and finish hanging my Christmas wreaths on the gates and I’m dreading it! I’m almost finished decorating the inside and starting my gift wrapping so I’m on the countdown. I’ll hopefully be finished by the time we leave for New York on Saturday!
