Watermelon Salad with Arugula and Feta
I had the most wonderful watermelon salad while we were at Bald Head Island and I've been craving it ever since. This salad from Ina Garten is very similar and very delicious! It's full of so many flavors and I just can't get enough watermelon this summer! I added the pine nuts for a little extra crunch. You could substitute goat cheese for the feta, but I think the feta is really delicious with the watermelon...it's the salty/sweet thing. I served this watermelon salad with a capresé salad and roasted shrimp. It turned out to be a really tasty dinner. I hope you'll let me know if you make it.
