Healthy and Delicious Coconut Chickpea Curry

Today I just couldn't wait to share a recipe for Coconut Chickpea Curry with you!  One of my favorite Christmas gifts was a fabulous apron by Hedley and Bennett.  These aprons are for people who seriously love to cook and I'm one of those people!  I decided to put my apron on yesterday and make this delicious Coconut Chickpea Curry.  I'm making this dish for my first cooking class of the new year on January 12!  It is creamy and delicious with just a bit of heat.  I love anything with coconut milk and the addition of spinach and mushrooms really made it the perfect curry.  I'm on a mission to make healthy eating a habit in 2017, so look forward to healthy recipes like this one for Coconut Chickpea Curry on Crazy Blonde Life!

I love how my Hedley and Bennett apron covers my whole shirt so if I splash something it goes on the apron and not me!

The finished curry served over quinoa instead of rice.
