ROASTED BEET AND BLUE CHEESE SALAD

Happy Friday everyone!  This beet salad from Gwyneth Paltrow's new cookbook, It's All Easy is just amazing.  The blue cheese in the salad is the perfect combination with the flavor of the beets and the slight bitterness of the radicchio.  The endive gives it a good crunch and the dressing pulls it all together.  When you're eating this salad, you just know that you're doing something really good for yourself.  This salad could be a main dish because the egg adds protein, but I served it with a piece of grilled tuna.  Roast the beets early in the day or even the night before and this salad is a breeze to put together.  This salad is gluten-free and vegetarian, but it would be over the top with some crumbled bacon added in!  I'll try that next time!

To roast the beets, simply place them on a baking sheet, drizzle with olive oil and salt and pepper and roast at 375 degrees until tender  Let cool, peel and slice!
