15 Healthy Recipes to Make for Dinner in January
When the holidays roll around, I really look forward to eating my favorite rich indulgent foods, but by the time January gets here, Iβm done. All I want is light and healthyβ¦lots of salads, fresh veggies and fish. I have also really loved tofu and itβs really quick and easy to prepare.
Last night, I pulled out some leftover salmon, chicken that I had made in the crockpot for tacos, salad greens, goat cheese, avocado and made some coconut rice. Baldy and I made our own bowls with these ingredients and it was delicious! If you havenβt made my famous coconut rice, you really need to try it because itβs the best rice ever. I make it in my rice cooker and it goes well with most everything and since it has coconut milk as an ingredient, it doesnβt dry out in the refrigerator so leftovers are amazing!
