Black Bean & Corn Salad – You’ll Make This Salad All Summer Long

I made this easy salad for dinner last night! It was great with burgers, and it would be good as a side with grilled chicken or salmon! It also would be amazing as a vegetarian main dish salad…add a little feta and serve with brown rice or quinoa! Leftovers are the best because the beans absorb the vinaigrette and are so flavorful!

    Hi Suzanne,
    I make a version of this but haven’t used lime in the dressing, will try that the next time. Usually I just toss in whatever I have on hand (peppers, scallions, radishes etc) and stir it up. So good, especially the next day as you said. We’re having the leftovers with chicken tonight!

      Your version with radishes sounds so delish! I love them so much! We had this salad leftover with salmon last night and I had a little for lunch today! I love leftovers!

    Absolutely yummy dish and healthy! I meant to take a pic to share. We ate the leftover yesterday with Red Quinoa organic tortilla chips. Adding it to our favorite staple menu’s!
