Happy Weekend Everyone!  We’re all starting to think about July 4th plans so here’s a little inspiration for your celebrations!  I’ll be back to normal (whatever that means) on Monday, but in the meantime, I’ll be spending the with family and catching up from the past week or so.  Thanks so much for your thoughtful messages and comments! 

I’ve been making this recipe for Orzo with Roasted Vegetables for years!  It’s a crowd pleaser that goes with grilled chicken or fish and it also makes a delicious side dish for burgers.  Simply roast veggies (including eggplant, bell peppers and onions) in the oven, toss with a zesty lemon vinaigrette and top with feta cheese!  It’s even better left over, so make a little extra for lunch the next day.  You’ll also love this Black Bean Salad with Grilled Corn and Lime Vinaigrette!  For all the avocado lovers out there, follow me on Pinterest for sooo many great avocado recipes!
