Roasted Beet Salad with Chives and Grapes

I had the most wonderful beet salad in Atlanta at South City Kitchen last week while I was visiting Lauren.  We all loved it so much that we tried to recreate it the next night for dinner and the results were fabulous!  I made it again last night and served it with grilled tuna.  I think it’s my favorite beet salad…yet!  I served the salad on an ironstone platter that I found not long ago in an antique store.  I love ironstone and this pattern is very beautiful.  It’s marked J. Clementson – Parisian Groups on the bottom and was probably made sometime in the late 1800’s.  The platter came with a terrine and ladle which is evidently very unusual because the ladles are usually broken.  

I’m so excited for daylight savings time on Sunday!  It’s like a race with the clock sometimes to get a recipe made and photographed before it gets too dark.  It was almost too dark when I took these pictures so they’re not the best, but you get an idea of what the salad looks like.  I promise it is delicious!  The roasted grapes give the salad a sweetness and are the perfect combination with the beets.

I have such a huge collection of cookbooks and I rotate and revisit them frequently because some of them I’ve had for 25 years and still use.  My favorite new cookbooks are Cook Beautiful by Athena Calderone, A Kitchen in France by Mimi Thorisson, Half Baked Harvest by Tieghan Gerard, Gather by Gill Meller, and Eat Beautiful by Wendy Rowe.  I’ve also just ordered In My Kitchen – a vegetarian cookbook by Deborah Madison.

The top I’m wearing is by Tyler Jacobs and it’s so cozy and soft, the shoes are Dolce Vita (no longer available, but I’m loving these) and my pants are J Brand (I’ve had them for so long, but this is the new color for spring)!
