Farro with Roasted Sweet Potatoes, Red Onion and Goat Cheese

01

Farro is an ancient wheat grain that been consumed for thousands of years around the world.  This high fiber food has become extremely popular throughout the world and is a healthy grain that also tastes really good.  It is an excellent source of protein, fiber and nutrients like iron and magnesium.  Farro does contains gluten protein and is not gluten free.  It is a whole grain that is an excellent source of protein and fiber.  It is also high in B vitamins and provides iron, magnesium and zinc.  Combined with sweet potato, red onion, radishes and goat cheese, farro is not only extremely delicious, but also extremely nutritious.  You can’t go wrong with this beautiful salad, whether it’s a main vegetarian meal or a side with salmon or chicken.  Keep scrolling for the recipe.

I believe that eating healthy food is the most important thing that you can do for your health, but most people can benefit from supplements.  I love Vital Proteins Collagen Powder, Welleco Super Elixir and a non synthetic magnesium supplement.  I take the collagen powder and Super Elixir in the morning and the magnesium supplement in the evening.

This recipe was adapted from Cook Beautiful by Athena Calderone!  I’m obsessed with her cookbook and this is one of my favorite cookbooks right now!  Thanks so much for reading Crazy Blonde Life!  Have a great day!
