Butternut Squash, Spinach & Goat Cheese Pasta

I first saw this recipe on one of my favorite blogs, Camille Styles, and knew that I wanted to make it.  I finally got around to trying it on Saturday evening.   I made just a few changes, like adding a little more squash and some chopped bacon and it was sooo delicious!  I’m not going to say that it’s low in fat or calories, but I will say that it’s healthy and definitely worth the splurge.  I love roasted butternut squash and combined with browned butter, bacon and goat cheese, just to name a few of the ingredients, it is divine.  This pasta comes together easily and would be ideal for guests or just for a weeknight family dinner.  It’s one of those recipes that you’ll want to make over and over again…I promise, it’s that good!

Kitchen Aid Copper Stand Mixer  My Kitchen Aid mixer is over 30 years old and still going strong.  If I ever need to replace it, I’ll buy this beautiful copper one!

Sonoma Wood Spoons  You can never have too many wooden spoons.  These are beautiful and functional.

Copper Stock Pot  I love cooking in my copper pots.  They cook evenly and look beautiful at the same time.  They are definitely worth the investment.

Pumpkin Tureen  I want this soup tureen for my Thanksgiving table.

Zwilling Chefs Knife  A good chef’s knife is a basic kitchen necessity.

Stainless Steel Beverage Bucket  A beverage holder makes life easier when you have a crowd and I love how this one looks.  It’s great for so many occasions.

    Oh my! this looks beyond scrumptious! Im not quite vegetarian, as i love fish.. but i could be if i ate something like this more often. I will print out the recipe. One of my favorite things to make in the Fall is butternut squash soup, ive always loved it. Goat cheese is so good, my mom doesnt like it and i said, I love it so much i could spread it on cardboard and eat it! ( kidding, but you get my point 🙂

      This recipe is truly delicious! I was vegetarian for 18 years and still eat very little meat. I cook it more than I eat it! I love fish! Just leave the bacon out of this if you want it to be completely vegetarian! You’ll love it! Thanks so much for reading!
