This post has all the ingredients for a cozy fall weekend! I’m really loving this very cozy sweater I’m wearing by John + Jenn for fall! It goes with so many things and it’s easy to throw on over jeans or even a dress. I paired it with my over the knee suede boots and a tank underneath!
I’m also including a fabulous recipe for Creamy Roasted Cauliflower Soup in this post! I made this soup for dinner last night and it was delicious! It is the perfect soup for a cozy fall weekend! This soup is very creamy, but contains no cream! It gets its creaminess from being blended together in the Vitamix. A Vitamix Mixer makes quick work of soup making and so many other tasks in the kitchen!
To make this soup, chopped cauliflower is cooked with fennel, onion and rosemary and creamy roasted garlic is added at the end. The flavors meld perfectly and it is very very flavorful! If you’re not a fan of cauliflower, don’t let this stop you from trying this soup. The fennel and onion give it a flavor all it’s own. Serve with homemade croutons, grated parmesan, a drizzle of olive oil and a sprinkle of fresh rosemary!

Love the sweater! I am very hot natured and sometimes a coat is just too much for me. The sweater would be just right for those days when it’s not below freezing outside!! The soup looks very good! Nothing better in winter than a good hot soup!
