Yesterday we finally got some relief from the high humidity and heat and it was sunny and beautiful out!  I decided to make Fresh Pineapple Pina Coladas by the pool!  Fresh pineapple makes them so delicious!  Afterwards I made a Black Bean and Corn Salad with Avocado Dressing.  This salad is quick and easy to put together and the dressing is so good that I could have just had a bowl of it for dinner.  Luckily there is some leftover to serve with chips for a snack!  It would also be fabulous with fish tacos or as a side for quesadillas.  I have included the recipes below!
