These lentils are my daughter Rebecca’s favorite and I saw the recipe as I was looking through my Barefoot Contessa at Home cookbook and decided to make them for dinner last night.  I grilled some wild salmon and served alongside.  Salmon and Lentils are always a good combination and this meal was delicious!

This is a great dish to make last minute because most of us probably have the ingredients on hand.
