What Will the Easter Bunny Bring?
Since I was a little girl, I’ve loved Easter. The excitement of getting up to see what the Easter Bunny left in my Easter basket, putting on a pretty dress for church and then having lunch on Easter Sunday. Later after I was grown up with children of my own, I loved shopping for Easter baskets, putting them together and leaving them on the porch and you know me…I’ve always enjoyed making a festive lunch and setting the table!
Usually, I prepare salmon in some form…one year I made Martha Stewart’s stuffed salmon (I can’t find the recipe online, but I’ll make it soon and post). It’s quite an undertaking, but one of the most delicious recipes I’ve tasted! Usually I’m short on time so I make my Panko Crusted Salmon or a salmon salad. When I do the Panko Salmon, I make a big macaroni and cheese along with asparagus or green beans. Buttermilk Pie is my favorite spring dessert and strawberry shortcake runs a close second.!
This year, we’ll have our daughter’s family over for an Easter Egg hunt and lunch and then, of course, more Easter Baskets at Suz and Pop’s house! Easter feels like the official start of spring…everything is starting to bloom and the weather is getting much warmer. It’s the perfect time to put on a pretty dress and celebrate!
