Tortilla Smash Burgers with Guacamole & Pickled Onions

Let’s just call these Tortilla Smash Burgers irresistible! If you love a regular smash burger, you’ll love these even more! A crispy tortilla replaces the bun so you can really taste what’s inside! Seasoned ground beef, melty cheese and delicious toppings give you a burst of flavor when you take a bite!

A traditional tortilla smash burger (if that’s even a thing) has more of a mayonnaise based sauce and is topped with American cheese, lettuce and tomato, but I decided to switch up the toppings and use one of my favorite combinations…pickled onions and guacamole! I used a Mexican blend cheese as well. The beauty of these is that you can make them different every time and try different flavor combinations. I even had someone ask if ground turkey would be good and I think it would be delicious! The recipe is below and you must make these soon! I promise you won’t be sorry!

Other than the guacamole and pickled onions, I chopped a fresh tomato and added jalapeno slices for a little heat!

I purchased these fun taco stands from Amazon (linked below) and it made serving the smash burgers so easy and made a nice presentation! If you want to feed a crowd, make these ahead, reheat and then add the toppings. I used my counter top griddle and decided that I definitely need an outdoor black stone griddle for next time!

These burgers cook up very quickly and they disappear just as quickly so be sure to make plenty!

Tortilla Smash Burgers with Guacamole & Pickled Onions

These tortilla smash burgers are so addictive and couldn't be easier to make!

Ingredients

  • 1 pound ground beef
  • 1 tablespoon Old Bay Seasoning
  • Sea salt and freshly ground black pepper
  • Small flour tortillas
  • Pickled Onions - Microwave 1/2 cup each vinegar and water in a heatproof jar for 3 minutes. Stir in 1 teaspoon sugar, 1/2 teaspoon salt and 1 sliced red onion. Let stand for 20 minutes.
  • Chopped fresh tomatoes
  • Shredded Mexican Style Cheese or your favorite
  • Guacamole store bought or homemade
  • Jalapeno slices (optional)

Instructions

  1. Add Old Bay seasoning, salt and pepper to the ground beef. Mix well and divide into 5 or 6 golf ball size balls.
  2. Place each ball of ground beef onto a tortilla and smash it so it comes almost to the edges of the tortilla.
  3. Place tortillas, meat side down on a griddle or flat grill and cook for about 4 or 5 minutes or until meat is cooked to your liking. Flip over and top with cheese.
  4. Remove the tortillas from the griddle and place on a baking sheet. Place in oven under the broiler just long enough for the cheese to melt.
  5. Remove from the oven, fold and top with guacamole, pickled onions, tomato and jalapeno slices, if desired. Eat and enjoy!

Notes

This recipe is easily doubled and can be made ahead. Just reheat the tortillas and add the toppings!
