This & That for November

Well we are finally having some normal weather around here and we enjoyed a fire last night! I made my fabulous Prosciutto Rolls (recipe below), some sweet-spicy pecans (recipe also below) and added store bought pimento cheese along with fabulous grilled olives, crunchy pumpkin crackers (from Trader Joes) and popped a bottle of RosΓ© from Dry Farm Wines. It was such a nice evening and when we came in, we watched the last episode of The Bear. I know we’re probably the last people in the world to watch, but we’ve loved it! If by chance, you haven’t seen The Bear, it’s very very good!

I’m going to share two easy recipes today (both pictured above) that you probably can remember without looking after you read them! The first is for my very delicious sweet-spicy pecans…they’re so addictive and so easy to make. Simply melt 1/2 stick of butter in a small cast iron skillet with 1/3 cup packed brown sugar…add some salt and pepper and a little heat (cayenne, Honey Aleppo pepper or red pepper flakes). When that has all melted together, add about 2 1/2 cups of pecan halves. Let it cook over low heat for about 15 minutes but watch to be sure the sugar doesn’t start to burn and stir frequently. Remove from the skillet and spread on a piece of parchment paper to cool. These make the a fabulous hostess gift. Make extra and freeze to use on cheese boards and salads!

The second recipe is for the prosciutto rolls - warning…these are addictive as well! You’ll need 1 package of Boursin cheese, 1 package of prosciutto (I used Trader Joes) and some hot honey. Place about a tablespoon of Boursin on the end of a piece of prosciutto and roll it up. When you’ve made all of the rolls, place into a hot skillet with just a little olive oil. You want your skillet to be hot so that the cheese doesn’t melt too much. Brown just a bit, remove to a platter and drizzle with hot honey (I used Mike’s)! You’ll definitely be the hostess with the mostess because these are fabulous! You can watch my video on Instagram if you like)!

I always get questions about my olive oil dispenser and it’s no longer available or at least I can’t find it! This one is similar (I used it in my Instagram video that’s linked above) and would make a great gift for anyone who loves to cook!
