The Perfect Dinner for a Summer Evening - Honey Mustard Salmon with Summer Veggie Salad
It seems that lately, we’ve been having to say too many goodbyes! Our daughter Rebecca has been home for about 3 weeks and is leaving tomorrow to go back to Boston! We’ve loved having her here…it’s the only thing about Covid that I’ve liked! Anyway, invited everyone over for a family farewell dinner last night and made this easy and really yummy salmon. I’m sure I’ve mentioned that one of my favorite food blogs is The Modern Proper and that’s where I found this recipe. It was really quick and easy, which is the way to go as far as I’m concerned, and also healthy and delicious!
The summer squash is combined with cherry tomatoes and tossed in a delicious vinaigrette…then the whole thing gets spooned over the salmon right out of the oven. I loved the combination of the warm roasted salmon with the raw veggies and it made such a pretty presentation! Summer food is so pretty!
