Crispy Parmesan Sweet Potatoes
Crispy Parmesan Roasted Sweet Potatoes are a delicious twist on classic roasted sweet potatoes that combine the sweetness of sweet potatoes with savory flavors. Coated in a blend of herbs, salt, pepper, and garlic powder, these sweet potatoes are then tossed in a generous drizzle of olive oil so that they roast to crispy perfection. The key to their incredible flavor is that theyβre baked on parchment paper over a bed of grated Parmesan cheese. The cheese creates a deliciously salty crust as the potatoes roast. With 40 minutes in a hot oven, these sweet potatoes become a beautiful golden brown with an irresistible crunch!
After coming out of the oven, the roasted sweet potatoes are sprinkled with fresh thyme which complements their sweetness. A finishing drizzle of Calabrian chili oil adds a touch of heat. I served the Crispy Parmesan Sweet Potatoes on a gorgeous Portuguese platter that belonged to my best friends Motherβ¦we called her Kiko. I love having this beautiful platterβ¦every time I use it, I think of Kiko! She loved beautiful things, delicious food and good wine!

Crispy Parmesan Sweet Potatoes
Ingredients
- 4 small sweet potatoes, cut in half lengthwise
- Olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 1 cup finely shredded Parmesan cheese
- Fresh thyme for topping
- Calabrian Chili Oil to finish
Instructions
- Preheat oven to 400 degrees.
- Line a baking sheet with parchment paper.
- Place sweet potatoes in a bowl and add the olive oil, garlic powder, Italian seasoning, cayenne pepper and salt and black pepper. Mix until the sweet potatoes are well coated.
- Grate Parmesan cheese onto the baking sheet and spread so that it's even. Place sweet potatoes cut side down on top of the Parmesan.
- Bake for 30 to 40 minutes until sweet potatoes are tender and the bottom layer of cheese is crispy and browned. Remove and let cool.
- Top with Calabrian Chili oil and thyme.
- Enjoy!
