Taco Salad for Taco Tuesday- A Healthy Alternative
I have been in a cooking funk lately…wanting to make healthy dinners, and all the while craving pasta! Last night, I was determined to make something delicious, easy and healthy so I turned to my latest What’s Gaby Cooking cookbook. The page literally fell open to this taco salad recipe. I tweaked it just a tad because I didn’t have all the right ingredients, so don’t sweat if you have to substitute frozen corn for the fresh or use red onion instead of shallot.
