Summer Charcuterie Board Featuring Grilled Peaches

I’m pretty sure I would fall into a deep depression if I couldn’t eat cheese. This not drinking wine thing has been hard, but please don’t take away my cheese too!

Cheese boards are not only easy to make, but the sky is the limit when it comes to creativity. I won’t say this one was my most creative board visually, but what makes it different is that I grilled the bread, the wheel of brie and the peaches. If you haven’t tried grilled peaches, you’re really missing out…they become intensely sweet when grilled and are delicious paired with most any cheese!

I also love to include seasonal fruits, Burrata, olives, and several other kinds of cheese! You just can’t go wrong with a charcuterie board. Get creative and experiment by grilling figs, or adding something unexpected such as dark chocolate or chocolate covered nuts! Chocolate is surprisingly good with cheese!

To grill the peaches, cut them in half and leave the pit intact if it’s hard to remove. Once the peaches soften up on the grill, the pit is really easy to take out. Simply leave them on low heat for about 10 minutes and you will have the sweetest peaches you’ve ever tasted. They are also great on the grilled bread…the combination of sweet peaches with the garlic, olive oil and flaky sea salt on the bread is divine!

You can see that I added honeycomb to this board and it’s good with almost everything. The texture is a nice addition to the board and it’s so petty. My favorite bites on the board are piece of grilled bread with a smear of brie and a peach, Burrata with prosciutto, goat cheese with a fig and prosciutto, and cherries with Manchego.
