Sheet Pan Chicken Fajitas
There is something about a warming dinner baked in the oven that makes the whole house smell good! That’s one of the many reasons to make these Sheet Pan Chicken Fajitas!
I made this recipe for Sunday dinner for our family, including my daughter and her husband, my three grandsons, Sarah and Baldy and me. Everyone loved it, including Bristol who is 7 months old! I’m probably one of the few people on the planet that loves leftovers, but I doubled the recipe so there would be some leftover for weekday lunches! I think it makes life easier to have something delicious to reheat! I did underestimate how much would be eaten at dinner, but there is still plenty left for tomorrow.
This recipe is easy to put together…just put the strips of chicken in the marinade earlier in the day. Chop the peppers and onion and throw it all on a sheet pan to bake at 375 for 20 to 30 minutes, or until the chicken is cooked through and the veggies are tender. The flavor of the marinade is so delicious with the the peppers and onions. My family devoured these fajitas!
