Romaine Salad with French Bread Crispies and Lemon Pecorino Vinaigrette
There isnβt much better than a fresh salad with homemade dressing! As I was assembling this salad, it felt like I was creating a layered masterpiece that we could eat!
This Romain Salad combines crisp greens with the crunch of French bread crispies, toasted in the oven to golden perfection. The salad is dressed with a bright lemon pecorino vinaigrette, made from white wine vinegar, Dijon mustard, and freshly grated pecorino cheese, adding a tangy richness that beautifully complements the romaine. Fresh mint leaves give it an extra bit of interest, infusing each bite with an interesting flavor, while crumbled bacon introduces a smoky, savory element that ties the dish together in a deliciously satisfying way. This blend of textures and tastes makes for a truly memorable (and beautiful) salad experience, perfect as a light meal or an elegant side.
Make extra French bread crispies, bacon and dressing (this recipe already makes more dressing than youβll need) so you can easily assemble this salad again because once you taste it, youβll want more!
To serve this salad as part of a buffet, simply tear or chop the lettuce into bite sized pieces, add the other ingredients and toss with the dressing!

Andβ¦on another subject, I have given in slightly and decided to do a little Christmas decorating before Thanksgiving, partly because Thanksgiving is so late this year.
