Creamy Orzo with Chicken & Spinach
I’ll have to confess that I saw a guy make this on Instagram and it looked so easy that I decided to try it! I made it for my family last Saturday night and didn’t even measure anything…I just threw it all in the casserole dish. I was a little skeptical when I put it in the oven because of the way it looked, but when I took it out and removed the foil to stir up the ingredients, it looked delicious and there was not one bite left. My grandson loved it and the men had seconds…my son-in-law added a dash of hot sauce to his second helping.
Yesterday, I decided to make it again and I actually measured everything out. It didn’t make too much of a difference but I did add a bit more spinach. We love this casserole and it’ll be one I make often because it’s easy and delicious as well as something that kids and adults like. I hope you’ll try it! Keep scrolling for the recipe!
When the casserole comes out of the oven the first time, be sure to stir it well to incorporate the cheese into the pasta and to break up the tomatoes a bit. Top it with a generous amount of Parmesan and put it back into the oven until the cheese melts. I sprinkled a dash of Honey Aleppo Pepper over the cheese and put it in the oven for about 10 minutes…then turned on the broiler for about 5 minutes. Just be sure to watch it so it doesn’t burn.
