Mustard Roasted Chicken and Potatoes + My Anthropologie Haul
I’ve gotten several new cookbooks recently and one of them is called Generations - Rustic Joyful Food by Danielle Kartes. This cookbook is as much fun to read as it is to cook from. The recipes are straightforward and easy to make and every one I’ve tried has been delicious! This Mustard Roasted Chicken and Potatoes has been my favorite so far and it couldn’t be easier to make! You could use chicken thighs instead of chicken breasts but the cook time would be a little longer. I also sprinkled a little paprika over the chicken (which I forgot to mention in the recipe). I hope you enjoy this one!
This cookbook would make an ideal gift for anyone who loves to cook, but particularly for someone who is just starting to cook because, as I said before, the recipes are straightforward and easy to make! Mustard Roasted Chicken and Potatoes
Ingredients
- 6 Yukon Gold potatoes, unpeeled
- 1/2 cup chicken stock
- 1/2 cup olive oil
- 1/2 cup grainy mustard
- 4 cloves garlic, smashed and chopped (or pressed in a garlic press)
- Juice of 1/2 lemon
- 1 teaspoon dried oregano
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon kosher salt (or to taste)
- 1 teaspoon freshly ground black pepper
- 4 large boneless chicken breasts
- 2 tablespoons butter
Instructions
- Preheat the oven to 375 degrees. Put the potatoes in a medium soup pot, and cover with water. Bring to a boil for 15 minutes.
- Meanwhile, whisk together all the remaining ingredients (except butter and chicken) to make the dressing.
- To assemble, quarter the potatoes and lay the in the bottom of a 9 x 13 baking dish.
- Arrange the chicken breasts on the potatoes. Pour the dressing over the chiciken and potatoes making sure to get dressing on every chiciken and potato. Add a little bit of butter on each chicken breast (this will make them brown and tasty). Cover tightly with aluminum foil and bake for 30 minutes.
- Remove the foil and finish cooking, uncovered for about 30 more minutes. Enjoy

Anthropologie is my go-to for affordable wardrobe pieces and they have so many great things right now! They are selling quickly because when I went to link a few of my purchases, they were already sold out…I did substitute!
My purchases include the denim jacket with leopard collar, both white blouses…one has an attached belt and the other is a pleated peplum (I know…but they are different and so flattering), and the jeans. I also really love the leopard top and the black lace top.
