Meatballs in Tomato Sauce with Goat Cheese & Basil

Over the summer when I was at Bald Head Island, Baldy and I went out to dinner and had a delicious meatball appetizer and I’ve had it on my mind ever since.. It was just so simple but so delicious! I decided to recreate that appetizer and I’ll have to say that mine is even better! The only problem is that I had to clean up the kitchen when I was finished cooking and I wasn’t looking out over the harbor at Bald Head!

My recipe for Meatballs in Tomato Sauce with Goat Cheese & Basil is so easy to make and really doesn’t make that much of a mess. It’s great as an appetizer with toasted French bread, but you could also serve these meatballs over pasta…the goat cheese would melt into the pasta making a creamy and delicious sauce! I’ll have to try that next time…

Meatballs with Tomato Sauce & Goat Cheese

These meatballs are so versatile! Serve them as they are in the recipe as an appetizer or first course, or stir the goat cheese into hot pasta and add the tomato sauce and the meatballs! You really can't go wrong!

Ingredients

  • Tomato Sauce
  • ¼ cup olive oil
  • ½ cup minced yellow onion
  • 1 -1/2 jars tomato sauce (I used Rao's)
  • 1/4 cup fresh basil, finely chopped
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • Meatballs
  • 2 pounds ground beef, 80% to 85% lean
  • 2 large eggs
  • 1 cup panko
  • 3/4 cup grated parmesan cheese
  • ½ cup finely minced yellow onion
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ cup chopped basil
  • 1 large log goat cheese
  • French bread toasted with olive oil and sea salt

Instructions

  1. For tomato sauce - Add olive oil to a hot skillet and add chopped onion. Sauté onion until tender and add tomato sauce, salt, pepper and basil. Cook on medium for about 10 minutes and keep warm
  2. For meatballs - Add ground beef to a large bowl and add eggs, panko, parmesan, finely minced onion, salt, pepper, Italian seasoning, garlic powder and basil.
  3. Heat a large skillet over medium heat and add olive oil. Cook meatballs until they are at desired doneness. When done, add meatballs to tomato sauce.
  4. Pour meatballs into a large serving bowl, top with goat cheese pieces and sprinkle with basil. Serve with French bread toast.
  5. Enjoy!
