Baked Brie in Puff Pastry with Caramelized Onions

I served my baked brie on a round board along with Rainforest Crisp Crackers, Flatbread Crackers and Effies Oat Crisps (I found all of my crackers on Amazon and ordered extra to have on hand for the holidays). You could use any cracker of your choice or rounds of toasted French bread.

Baked Brie in Puff Pastry with Caramelized Onions
Ingredients
- 1 package puff pastry
- 2 yellow onions, sliced
- Olive Oil
- Salt to taste
- 1 - 16-oz round of brie (small)
- 1 egg
- 1/3 cup Fig preserves (or other that you like)
- Assorted crackers, chopped rosemary and pomegranate seeds to garnish
Instructions
- Preheat your oven to 350 degrees.
- Sauté the onion in a drizzle of olive oil until caramelized and browned - about 30 minutes. Watch closely and stir often.
- Meanwhile, unwrap one square of puff pastry and place on a parchment lined baking sheet. Add the brie and score on top so that the preserves sink into the cheese. Add fig preserves to the top of the brie.
- Add a large spoonful of caramelized onions to cover the fig preserves. You'll have leftover onions so save them for another use.
- Make an egg wash by combining one egg and one tablespoon of water. Beat until combined.
- Fold the ends of the puff pastry over the brie, starting with one corner. Brush the corner with egg wash and continue with each corner until the brie is a neat little package.
- Bake in a preheated oven at 350 degrees for about 25 minutes.
- Garnish with chopped rosemary and pomegranate seeds and serve with crackers of your choice
