Thai Chicken Salad - An Easy Salad with Big Flavor
When summer rolls around, we want foods that are lighter, healthy, and easy to prepare! This Thai Chicken Salad is all of that and it also comes with big flavor!
The crunch of the veggies, the flavor of the mint and the combination of peanut butter and soy sauce give this salad so much flavor and you’ll want to eat it every day! When you take the first bite, you know you’re doing something good for your body and you;re eating something so delicious! This seriously, is one of my favorite recipes of all time!
The original recipe called for regular peanuts, but I decided to substitute honey roasted peanuts for a little extra sweetness and crunch! If you’ll be eating leftovers, be sure to save some fresh peanuts to sprinkle on the salad because that’s one of the best parts! When I make it again, I’ll leave the peanuts to the side so they stay really crunchy and people can add their own.

Thai Chicken Salad with Peanut Dressing
Ingredients
- For the Dressing:
- 4 tablespoons creamy peanut butter
- 4 tablespoons honey
- 4 tablespoons soy sauce or tamari
- 4 tablespoons of water
- 2 teaspoons rice wine vinegar
- 2 tablespoons sesame oil
- Juice of 1 line
- 4 teaspoons chili garlic sauce
- 3 tablespoons fresh ginger, grated
- 3 cloves garlic
- Flakey sea salt and freshly ground black pepper
- For the Salad:
- 2 generous cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 cup grated carrots
- 2 small red bell peppers, cut into thin strips
- 1 cup edamame beans, thawed
- 1/2 cup chopped radish
- 3 cups shredded cooked chicken - rotisserie, grilled or oven roasted
- 1 cup honey roasted peanuts
Instructions
- To make the dressing, combine all ingredients in a high powered blender and blend until combined.
- Combine salad ingredients, pour dressing over salad, sprinkle with salt and pepper, add the peanuts - toss to combine and enjoy!
I roasted my own chicken for this recipe but if you’re in a hurry, rotisserie chicken would make this salad so quick and easy!
