Blackened Salmon with Cauliflower Rice and Avocado
This recipe started out as blackened salmon tortillas, but quite honestly…I didn’t love it. It needed something, so I decided to tweak it a bit and came up with Blackened Salmon with Avocado and Cauliflower Rice. I added a few spices to the rub for the salmon, took away the tortillas obviously, added sautéed cauliflower rice and made an avocado creme to go on top. Can you ever have too much avocado? It was absolutely delicious and really easy. This was the first time I’d ever used cauliflower rice in a recipe and I decided it would be quicker and easer to buy it already “riced”. It comes frozen or fresh in the produce section but you all probably already know that…
It’s pictured without the avocado creme because it looked like a messy blob on top, but trust me, it’s a very tasty blob. I love the combination of the warm salmon and cauliflower rice with the crunchy cabbage and cilantro. Keep scrolling for the recipe!
