Dinner Tonight...Creamy Pumpkin Lasagna Rolls

For about two weeks, I’ve been promising to make lasagna and just haven’t gotten around to it! Making lasagna can be a time commitment and I have been exhausted every night for a while (can you relate)! #bloggerlife

We had a relaxing weekend, I got so much done on Saturday and decided last was the night to finally make a lasagna. I decided on this recipe for Creamy Pumpkin Lasagna Rolls and it was so delicious. I won’t say it was quick and easy, but it wasn’t terrible and I cleaned up as I went, so the final cleanup was quick. Baldy made a fire, we sat outside with a bottle of wine and this delicious dinner and it was worth every minute it took to make it and every calorie! Sometimes you just have to relax and enjoy life!

So, here is the recipe for this amazing dish! I hope you make it and enjoy as much as we did! It would serve six people pretty generously, but leftovers are always nice! Serve with a green salad and bread if you want to be extra indulgent! Enjoy!

If you want to get a jump on the recipe, fry the bacon ahead and measure everything in advance. You could also buy pre grated cheese to save a little time. When you put the lasagna under the broiler, be sure to watch it…15 minutes is an estimation but it depends on how hot your broiler gets.
