Happy Thanksgiving! I’m reposting this delicious soup recipe today because I just made it for our Thanksgiving Dinner and it’s so delicious! This soup has become a Thanksgiving tradition for us…the girls ask for it every year. I like serving it in small ramekins as a starter…the Thai curry paste in the recipe adds a little kick that’s an unexpected twist but goes really well with the rest of our menu! It’s so healthy because of the squash and coconut milk and it’s easy enough to make that I don’t just save it for Thanksgiving.
The only part that takes a little effort is cutting the butternut squash, but using pre-diced squash from the grocery store works perfectly and saves a lot of time (which is what I did here). The result is a creamy, delicious soup that fits right into the season.
