Braised Cherry Tomatoes with Burrata and a Drizzle of Balsamic
Honestly…do you know anyone that doesn’t love burrata? It’s creamy and indulgent and good with everything! This dish, which combines the scrumptious creamy cheese with braised cherry tomatoes, basil, lots of fresh garlic, and a drizzle of aged balsamic vinegar…is very much over the top delicious!
When I made this recipe for the first time, I used a full cup of olive oil, which was certainly delicious, but too much! I strained the leftover olive oil and it’s saved in the refrigerator to use with french bread when we’re having spaghetti or pesto! I did cut down the olive oil to 1/2 cup and added a drizzle of balsamic reduction which can be found easily in most grocery stores.
My grandson, Graham loved it and then had a little more bread after!
